Every meal below has been chosen with your volunteers and your bottom line in mind. These are crowd pleasers that batch cook well, hold their temperature, and don’t require a professional kitchen. Prices are estimates based on typical bulk ingredient costs. Your actual cost may vary.
Food Safety at the Pavilion
The Danger Zone: 40F to 140F
Bacteria multiply fastest between 40 and 140 degrees. Food cannot sit in this range. Hot food must stay at or above 140F. Cold food must stay at or below 40F.
Roaster Oven Rules
- Roasters hold food, they do not rapidly reheat it. Always heat food to 165F on a stove first, then transfer to a pre-warmed roaster.
- Pre-heat your roaster 30 minutes before food arrives. Never put hot food into a cold roaster.
- Keep the lid closed. Every time you lift it the temperature drops 20 to 30 degrees.
- Stir every 15 to 20 minutes. Heat comes from the sides. The center stays lukewarm if you do not stir.
Cold Food and the 2 Hour Rule
- For cold toppings on the serving line, place the bowl inside a larger pan filled with ice.
- Keep backup coolers in the shade. Keep them sealed until needed.
- Any perishable food sitting out without heat or ice must be thrown away after 2 hours.
- If Iowa summer heat pushes past 90F, that window shrinks to 1 hour.
- Only pull out what you can serve in the next 30 minutes. Leave the rest in the roaster or cooler.
